Prologue
After the Great East Japan Earthquake, harmful rumors about radiation hit many local products. Reconstruction and dispelling rumors. Everybody was exhausted by lasting harmful rumors, even though they made efforts day by day.
How do we invigorate local communities as Youth Dept. of Commerce and Industry? We would like to bring smiles to their faces, as they always support our activities. Because of such feelings, we have started to sell karaage fried chicken that everybody loves to eat in events.

Birth
At first, it was just an ordinary karaage fried chicken. But we, as Youth Dept., wanted to produce Matsukawa-machi branded karaage fried chicken used local ingredients.
After getting advice from local restaurants, we produced original dipping sauce that makes chicken soft and juicy featuring local Matsukawa-machi apple Sun Fuji and local sake from Kinsuisho Sake Brewery that is the only one sake brewery in Fukushima city.

We participate in Society of Commerce & Industry Food Tournament held by Fukushima Pref. Central Federation of Societies of Commerce & Industry Youth Dept. every year, aiming to win first place in the tournament. We have worked to improve the flavor that guest can accept the taste and select our food. Lastly, we first won a championship in the tournament in 2017. Again, we won first prize for the second year in a row. Now our product became representative karaage fried chicken in Fukishima both in name and in substance.

Specialty Fukushima-Produced Food
In order to produce additive-free sauce that have good keeping at room temperature, we have worked to review blending and ingredients and improved methods of production over and over again for two years. Our persistence is to use fresh apples and local sake produced in Matsukawa-machi, together with garlics and gingers produced in Fukushima. Also, we added apple-cider vinegar produced by Ohta Vinegar Shop that is the only one producer to produce authentic fermented vinegar in Tohoku area as a secret ingredient. Finally, we completed ultimate dipping sauce for karaage fried chicken named Ah! Purupuru Karaage no Himitsu (Oh! Secret of Elastic Fried Chicken) that is MSG-free, no preservatives, shelf-stable and having good keeping.

Handmade, Carefully Making One by One
It has just started to sell Ah! Purupuru Karaage no Himitsu (Oh! Secret of elastic fried chicken) that is filled with our thoughts, tasty Matsukawa-machi ingredients and Youth Dept. bonding. The product is carefully made one by one manually in a small processing factory. We pay much attention to hygiene control and quality management as well as flavor, and make efforts to provide safety and better food.

Basic Recipe for Frying Ah! Purupuru Karaage
(Oh! Elastic Fried Chicken)
Ingredients for 12 pieces of karaage (fried chicken)

Dark chicken meat 400 g
-
Dipping sauce Ah! Purupuru Karaage no Himitsu (Oh! Secret of elastic fried chicken) 80 g
Katakuriko flour (potato starch) 80 - 100 g
1. Cut chicken meat 30 – 35 g each. (palm size)
2. Shake a bottle of the dipping sauce, pour it to the chicken meat and knead it
for a minute. ※1
3. Dredge Katakuriko flour (potato starch) over the chicken meat, and deep fry
at 160℃ -170℃ for about 4 minutes. ※2
※1…It is possible to marinate the chicken in the sauce for 15 – 30 minutes.
※2…If it is fried at over 170℃, it is likely to burn easily.
